Day 2: Texas Last Diet
Ok, so day two hasn't been horrible yet. I felt like I was getting a headache earlier today, and I'm guessing that is due largely to having given up diet cola "cold turkey". Some of the literature I received also suggested that people who have insulin issues, or who are coming off high carbohydrate diets, can get headaches. I fit both those categories, so it might not be so much from the diet cola. I can't imagine how my body is reacting to the deprivation from all that caffeine and chemicals. I took an aspirin this morning, and had a quick cup of black coffee, and that seems to have done the trick.
For breakfast I had the Apple Oatmeal, and honestly it was almost too sweet to eat. I've never had much of a sweet tooth, carbs are my weakness. So although it's good to know that I can get a real sweet treat with the oatmeal, I'd much prefer something savory, or crunchy. It was super tasty however, and very easy to prepare. Of course, I took all my pills and drank all my water. I realize how important staying hydrated is, but I'm a little afraid to stray too far from the bathroom. I'm hoping my body gets used to this much liquid, because I'm afraid to take a drive in the car without a bucket. Not a good look in traffic. So today I'll lay low, and hope that I can adjust to all the water intake.
Lunch was quite delicious too. I had the broccoli cheese soup, and it was delicious; rich, flavorful and thick. How that is dietetic, I'll never know, but I was quite hungry, so it was incredibly good and easy to prepare. I made a big salad with a cup of the vegetables I am allowed, and also had an additional cup of raw broccoli. It seems like so much food, and I'm totally satiated now that I've eaten. I really can't say that I've suffered at all on the diet so far, other than coming down off the caffeine. I realize it's still early, but I'm thrilled so far.
Dinner was a hamburger in a bowl. This is a recipe that Vikki gave me on Thursday, and I loved it. Basically it's just a hamburger patty, on lettuce, with pickles and sliced onion. I didn't miss the bun at all. I then had a cup of zucchini, and a cup of broccoli. It seems like so much food. Anyway, day two seems to have been much better than I anticipated. We'll see what tomorrow brings.
