Day 47: Texas Last Diet
Today is Labor Day, so there wasn't a lot of work on. We ended up staying home most all day and cleaning house. I had my pancake for breakfast, and a big salad with the rest of the kale in it. I also had a trail mix packet. I didn't have any extra protein with lunch... and I'm not sure why. I think I just forgot it. I just noticed it in my journal right now, and guess I just dropped it somehow.
Dinner was amazing! I did another recipe out of Janeva's Ideal Recipes cookbook. That's the cookbook that Vikki has for sale at the office that was written by Janeva Caroline Eickhoff. I'm really glad I got a copy of this book, as after 47 days on the diet, there can be a huge need to get some variety. The other cool thing is that once I'm off the diet, I will actually have healthy options as part of my repertoire. So I looked up Janeva's recipe for lasagna. I am pretty sick of zucchini these days, so I replaced the zucchini with eggplant. I can't believe how good this dish was. I browned some ground beef, and then made a quick marinara sauce and seasoned it all up like I was making spaghetti. I sprayed the dish with Olive Oil Pam, and then layered eggplant, the meat and tomato sauce, and eggs and additional egg whites. I layered that to the top, sprayed on a little more Pam, and threw it in the oven at 375 for about an hour. It was soooo good, and it made a huge amount of food. I only threw in one pound of meat, so I assumed at first that I would need to eat half the lasagna. Well no, that didn't happen. A quarter of the dish was more than enough. The thing is chock full of eggplant, and in addition to the meat, there are quite a few eggs. I hate to break this to the "naked burrito" recipe, but this is probably the best dish I've had since on the diet.I had my Southwest Curls for snack, and didn't feel the need for a 4th Ideal Protein packet.
