Day 53: Texas Last Diet
Had an omelet for breakfast, and went out to lunch with my parents. I was able to order a Caesar Salad with grilled chicken on top, with the dressing on the side, and no cheese. That worked, and it was really good. Of course, that means I didn't get any of the good veggies during the day. We got really busy, and it was 6pm before I realized that I was so hungry I was getting a little shaky. I stopped and got a double meat hamburger, and knocked off the buns... but still no veggies. I got back to the house, and absolutely the only vegetable I had in the house was a full head of cauliflower. So I broke that into florets, and seasoned them with chili powder, salt and pepper, and garlic powder, and put them on a cookie sheet and baked them for 30 minutes at 400 degrees. The single layer helped to take off some of the water, so they weren't soggy. They were delicious, and I ended up with my complete 4 cups of veggies at that one sitting. At first I thought I couldn't possibly eat 4 cups of cauliflower, but they were so good, I wondered why I could just serve this as a snack during a movie?Anyway, still not good to push all those veggies to the end of the day, and I promised I was going to do something about this tendency. But habits do take a while to get ingrained. I won't beat myself up too much.
