Day 52: Texas Last Diet
Had scrambled eggs with some chopped broccoli and bell pepper in it. They were good, and a ready change after two weeks of pancakes.
Lunch was a bowl of soup, and a salad with kale and spinach. I put some tuna on the salad, so I got my extra protein.
For dinner, I made another one-pot wonder. I made a marinara sauce with ground turkey, and mushrooms and broccoli as my veggies. I cooked it a good long time, which made the marinara great, but the veggies were overdone. I should have added them in the last hour or so. The problem is that veggies give off liquid, and they can add too much water to the sauce. Anyway, I'm sure the answer is there somewhere, because it was still really good.
