Day 48: Texas Last Diet
Pancake for breakfast. How do they make that syrup so sweet without being fattening? I went to a lunch meeting at a restaurant today, and there was absolutely nothing on the menu that looked like I could eat it. I could have tried to make something work, but who was at the meeting sitting across the table from me? My coach Vikki LeBeau! Not a big deal, I just had water and a cup of coffee, and that held me until after the meeting. I had a bag of trail mix in the car, and that got me through until I could get back home.
Of course, that meant that I didn't have any veggies with my lunch, so sometime in the late afternoon, I grabbed the rest of the eggplant lasagna out of the fridge and heated it up. It was great again as a leftover. I knew that there was easily two cups of eggplant in that wedge, so I scarfed it down. I'm sure it's not good to wait so long to eat my veggies, but I thought it would be worse not to eat them. Oh yes, there is beef in the lasagna, so that was my extra protein for the day.
For dinner, we were running errands again, and we stopped at a local restaurant and I got a hamburger without the bun. I got a spinach salad as my side, and with the burger veggies, I think I got my 2 cups of good veggies in.
Southwest Curls for snack, and a mug cake just before bed rounded out my 4 Ideal Protein products. Good day... though I waited a long time between breakfast and lunch, and another long time for my midday veggies. I hope I don't start eating muscle again this week.
