Day 15: Texas Last Diet
Today was a good day. I had an omelet for breakfast. Or rather, I scrambled up the omelet mix. I also took my pills, and had my water.
Lunch is proving to be more of a challenge for me, because it seems like we're always on the road around lunchtime. It's wicked hot in the car, so I can't really bring much with me unless I do a cooler.... and I always forget to get the cooler ready in time. So today I just managed a bag of trail mix and a salad. I was challenged by Vikki at weigh-in yesterday to make sure to incorporate the right vegetables into my diet, and to remember that basic salad stuff is great for my digestion, but doesn't really count as a vegetable count. She referred me back to the one page handout of the types of veggie choices I have. So I didn't have the right mix of veggies in my salad, which meant that I had to move all four veggies to my dinner. I don't know if that's OK. I'll have to ask Vikki. I suspect that it will be fine as far as weight loss, but I'm not sure if loading the majority of my carb intake to dinnertime creates an issue with blood sugar.
Having said that, dinner was great. I browned up some lean hamburger meat, and threw in some broccoli, yellow squash and bell peppers and tossed them until they were softened. I threw in a bit of the soy sauce replacement for moisture, and seasoned it all as I normally do. My fourth veggie was green beans that I steamed up separately with salt, pepper and a little garlic powder. It was really good, but a lot of food.
I had my Southwest Curls for my snack. All in all, a pretty good day. I'm not feeling hungry tonight. I expect it's because I wasn't getting enough carbs from the salad vegetables last week. It also may be that I'm just settling into the diet after two weeks. Either way, I'm happy.
