Day 27: Texas Last Diet
Had my mango shake today, and I still felt pretty hungry. Luckily, it was one of those really busy days, so I didn't have time to fret about it.
For lunch, I grabbed my soy nuts in the car, and when we actually got settled a bit, I had a salad with some grilled chicken on it. So that was my extra protein for the day. I didn't get my healthy veggies with lunch, so I had to get those in later.
For dinner I make a really good "one pot" thing. I browned up some chicken breast, cut in strips to make it cook quicker. I added some zucchini, and Brussels Sprouts, spices, and some tomato sauce. I threw in quite a lot of chopped parsley, and let the veggies soften in the sauce. I was really good, and I was able to get all four cups of my veggies in one meal. I know that's not ideal, but it does happen to me now and again. I'm actually getting much better at spreading the veggies through the day. I think that was the only time this week I had to let that slip.
Anyway, cheesy crackers again for snack. I thought I'd reflect a bit, since tomorrow is the end of my fourth week on the diet. I think I'm doing really well, and I'm still super excited about the prospect of the weight loss and being healthier, but I think I'm getting a little bored. Nothing is new any more, and the rut of cooking all the time, going to the market so often, and feeling like I'm in some way missing out on things is starting to get to me. I'll talk to Vikki about that tomorrow, but I may need to spice things up a bit. I think I'll start working my way through the Janeva's Ideal Recipies cookbook that Vikki sells in the shop. They're all recipes for people on Phase 1 of the diet, and they look remarkably delicious. I meant to start those recipes this week, but the days just disappeared on me. Perhaps that will give me a bit more incentive, and make the diet new again. I hope I've lost weight this week, I don't know until weigh-in day, but I know some of the spark seems to be going out. I'm assuming that's part of the drill, but I would sure like to have that positive, energetic feeling about the diet.
