Day 17: Texas Last Diet
Good day today. We were on the road again all day, so my eating got a little messed up. I had a yogurt drink for breakfast, and then hit the road. We made it to the office around noon, and I had a salad, and a bowl of soup. By the way, when they tell you not to boil the soup, they mean it. I put it in the microwave, and it literally came out with chunks in it. It was kinda gross, and I didn't eat much of it. Of course, that meant that I didn't really get all the nutrition I needed at lunch, but I didn't have many choices.
Dinner was nice, and I think I made up for all the calories I missed at lunchtime. I made some chili with ground beef, and I actually used the cauliflower ricer. I grated the cauliflower and put a little PAM in a pan and browned up the cauliflower with a little salt, pepper and chili powder. It looked just like rice. I also baked mushrooms, a bell pepper, and zucchini. That gave me the veggies I needed for dinner, plus the veggies I missed at lunch. It was really good, and that cauliflower rice was amazing. It felt just like rice, and is a whole lot healthier.
I've felt pretty good today. I was really, really tired in the mid afternoon, but I think that is just a lot of work, and very little sleep. I also may be coming down with a cold.
